Soft, delicate crepes filled with a sweet coconut and jaggery mixture, Alle Belles are a beloved Goan treat. They are perfect for festive occasions, tea time, or whenever you’re craving something lightly sweet and comforting.
Ingredients
For the Crepes
1 cup all-purpose flour
1 tbsp sugar
1 egg, beaten
1 cup milk
1 tsp vanilla extract
A pinch of salt
1 tbsp oil (plus more for greasing the pan)
For the Filling
1 cup fresh grated coconut
Goan jaggery, grated (to taste)
½ tsp vanilla extract
A pinch of salt
2 tbsp cashew nuts, chopped
2 tbsp golden raisins
Method
1. Prepare the Coconut Filling
In a medium bowl, combine the fresh grated coconut, grated jaggery, vanilla extract, and salt. Using clean fingers or a spoon, mix everything together until well combined.
Add the chopped cashew nuts and golden raisins. Mix until evenly distributed. Cover and set aside while you prepare the crepes.
2. Make the Crepe Batter
In a medium bowl, whisk together the flour, sugar, and salt.
In a separate bowl, beat the egg. Add the milk and vanilla extract, then whisk until fully combined.
Gradually pour half of the wet mixture into the dry ingredients and whisk until smooth. Add the remaining wet mixture and continue whisking until you have a lump-free batter. If needed, add a little more milk to achieve a thin, pourable consistency similar to crepe batter.
3. Cook the Crepes
Heat a 9-inch skillet over medium heat and lightly brush with oil.
Stir the batter, then pour a ladleful into the center of the pan. Swirl the pan to spread the batter evenly across the base.
Cook until the edges begin to lift from the pan. Flip and cook the second side for a few seconds. Remove and place on a plate.
Repeat until all the batter is used, stacking the crepes as you go.
4. Assemble the Alle Belles
Place one crepe on a flat surface. Add two spoonfuls of the coconut filling near the upper edge.
Fold the sides inward, then roll the crepe into a log shape.
Repeat until all crepes are filled.
Serving Suggestion
Serve warm or at room temperature with a cup of tea or coffee. These also make a beautiful addition to festive dessert platters.
