The Ultimate Watermelon Salad

This Watermelon Salad is sweet, salty, and a burst of refreshing summer flavours in your mouth! With the barbecue season approaching, this is a great salad recipe to keep in your back pocket!



Ingredients


For the Salad

  • ½ Large Watermelon, cubed

  • 1 English Cucumber, cubed

  • ½ Red Onion, finely sliced

  • 12-15 Mint Leave, julienned

  • 4-5 Large Basil Leaves,  julienned

  • 250 grams Feta Cheese, crumbled


For the Dressing

  • 2 tbsp Lime Juice

  • 2 tbsp Sugar

  • 2 tbsp Extra Virgin Olive Oil 

  • Pinch of Salt


Method


  1. In a small bowl add the lime juice, sugar, salt, and olive oil

  2. Whisk them well together till they emulsify and set them aside for the flavours to develop

  3. Peel, slice, and cut the watermelon into bite-size cubes. If you are using a small watermelon, you could use a whole watermelon but if you are using a large watermelon, half the water would be sufficient for this recipe. Add the cubed watermelon to a large bowl or serving platter.

  4. Cube the English cucumber into bite-size cubes and add it to the bowl with the watermelon.

  5. For a little crunch, finely slice half a large red onion or a full small red onion. You could chop the onion slices into half if you like. Add it to the bowl.

  6. To give the salad a fresh flavour, add the finely chopped mint and basil leaves

  7. You can cut the feta cheese into small cubes or crumble it into the bowl.  Leave a little to garnish the salad once you have mixed it.

  8. Pour on the prepared salad dressing and gently give the salad a toss. Once all the ingredients have been well-mixed, crumble on the remaining feta cheese and enjoy!
