Pomegranate Coated Goat Cheese Ornament

This appetizer is proof that holiday entertaining does not have to be complicated to feel special. Creamy goat cheese, rolled into a festive ornament shape, and coated in jewel-bright pomegranate seeds for a pop of colour and freshness. It comes together in minutes and looks stunning on any holiday table!
Ingredients
300 g plain goat cheese, softened
2 tsp rosemary, finely chopped
2 tsp thyme, finely chopped
113 g pomegranate arils
Fresh thyme or rosemary sprig (optional, for garnish)
Method
In a bowl, mix the goat cheese, rosemary and thyme until smooth and spreadable.
Shape the mixture into a smooth ball using lightly oiled hands or plastic wrap.
Chill for 15 to 20 minutes until just firm.
Spread the pomegranate arils on a shallow bowl. Roll the chilled cheese ball in the arils, gently pressing so they adhere and fully coat the surface.
Garnish with a small herb sprig and ornament top if desired.
Serve immediately or refrigerate until ready to serve.
To Serve
Serve with crackers, crostini, or toasted baguette slices. A light honey drizzle just before serving is optional.
Make-Ahead Tip
Shape the cheese ball up to 24 hours ahead. Wrap tightly and coat with pomegranate just before serving for the freshest look.
