Method

  1. Line 2-3 baking sheets with parchment paper and set them aside.

  2. Add the cold butter and sugar to the bowl of the stand mixer and beat on medium speed until well combined.

  3. Add the chilled eggs, one at a time, and mix until just incorporated.

  4. Now add the vanilla extract and give it a quick mix.

  5. Add the all-purpose flour, cornstarch, and salt to a medium-sized bowl and quickly whisk them.

  6. Now, add the mixed dry ingredients in two batches to the bowl of the stand mixer and mix at a low speed.

  7. When the dough clumps up and starts pulling itself away from the sides of the mixing bowl stop mixing.

  8. Place plastic wrap on your work surface and turn the dough onto it.  Wrap the dough with the plastic wrap and gently work it together to form a dough.

  9. Dust the work surface with all-purpose flour and divide the dough in half.  Wrap one-half with plastic wrap and refrigerate.

  10. Dust the work surface, the rolling pin, and the top of the dough with a little all-purpose flour.  Roll out the dough to a thickness of about 1/4 inch.

  11. For a clean cut, place the sharper edge of the cookie cutter in some all-purpose flour before cutting the rolled-out dough into shapes.

  12. Place the cut-out cookies on parchment-lined baking sheets and refrigerate for 15 minutes.

  13. This is the best time to preheat the oven to 375F/190C.

  14. Repeat the process for the second half of the dough as well.

  15. Bake the cookies for 8-12 minutes, or until the edge of the cookies looks baked.

  16. Remove them from the oven and let the cookies rest on the baking sheet for 2-3 minutes.

  17. Transfer the cookies to a wire rack and let them cool completely before decorating (optional).
