The Best Kalakand Recipe

Today we are going to be making a Kalakand recipe! This Indian sweet is typically made with just two ingredients, milk and sugar which is enjoyed during the festive season. I am going to be sharing with you my recipe for making the most delicious and easy Kalakand right at home!



Ingredients


  • 375 grams Paneer, grated 

  • 1 litre Milk, full fat

  • 200 grams (1 cup) Sugar

  • 1 tsp Pure Ghee

  • ½ tsp (6 pods) Cardamom Powder 

  • A pinch of Salt 

  • 1 sheet Edible Silver Foil (Vark)

  • 2 Almonds – slivered

  • 4 Pistachio – slivered


Method


  1. Grease and line a 6”x 9” baking tray and keep it aside.

  2. Grind 6 green cardamoms and keep it aside

  3. Grate the paneer on the medium size grate.  

  4. Transfer the grated paneer to a deep thick bottom pan.  

  5. Pour the milk into the pan with the paneer.  

  6. Stir the two together and cook until the milk thickens this should take about 20 minutes. 

  7. Then add the sugar in two batches waiting till it melts before adding the second batch. Add the salt at the same time.  

  8. Continue cooking on medium heat for another 15-20 minutes till the mixture thickens even more.

  9. Reduce the heat to medium-low and add pure ghee and cardamom powder.  

  10. Continue to cook the mixture on medium-low heat for another 5-6 minutes until it thickens and you do not to see any streaks of milk. Take it off the heat, and transfer it into a lined tray to set.  

  11. After it has cooled completely at room temperature, garnish with edible silver foil (vark), slivered almonds, and pistachios.  

  12. Cover it with parchment paper, then plastic wrap and refrigerate for 1-2 hours. 

  13. To unmold the Kalakand, hold the parchment paper and remove it from the tray. Cut your desired shape and serve.

  14. Garnish with rose petals to impress with ease.
