Super Easy Snowball Cookies

Tis the season for snowballs and we are going to make them in cookie form! With just 6 ingredients, these Snowball Cookies or Pecan Balls are going to be the easiest treat you make this Christmas season! These are also enjoyed as Pecan Balls and Mexican Wedding Cookies.
Ingredients
For the Cookies
½ cup (113 grams/1 stick) Unsalted Butter, room temperature
2 ½ tbsp (15 grams) Confectioners’ Sugar (powdered sugar, icing sugar)
1 tsp Pure Vanilla Extract
1 cup (140 grams) All-Purpose Flour
⅛ tsp Salt
½ cup (56 grams) Pecans, finely chopped (very lightly toasted for 7-8 minutes at 350F/180C)
For Coating
½ – 1 cup Confectioners’ Sugar (powdered sugar, icing sugar)

Method
Line a baking sheet with parchment paper and keep it aside.
In a bowl, add room-temperature unsalted butter and confectioners’ sugar. Using a spatula, cream the two together.
Add the vanilla extract and blend it in.
Now add the all-purpose flour, salt, and finely chopped toasted pecans. Mix till well blended and it comes together to form a dough.
Cover the bowl with a plastic wrap and refrigerate for 30 minutes.
Preheat the oven to 350F/180C
Use a scoop that is 1.5 inches in diameter and start scooping the firm cookie dough. Place the scooped-out dough in the palm of your clean hands and firmly roll them into round balls. Place the formed cookies on the lined baking sheet.
Once you have finished forming all the cookies, place the baking tray in the preheated oven and bake the cookies till they get a light golden colour at the bottom. This should take anywhere between 15-18 minutes. The time will vary depending on the size of the cookies.
To coat the cookies, add confectioners’ sugar in a bowl and once the cookies have cooled for about two minutes, toss them in one at a time and give them a first coat of the confectioners’ sugar. Place them on the wire rack to cool completely before tossing them back in one at a time in the confectioners’ sugar for a second coat.
Store them in an airtight container and enjoy!
