Quick Easy Strawberry Cake Recipe

This easy and delicious Strawberry Cake recipe, with fresh strawberries and a perfect crumb, makes an amazing sweet treat! This Strawberry Cake recipe is a must-try this summer and will impress your family and friends.
Ingredient
2 Large Eggs
1 cup (190 grams) White Granulated Sugar
1 cup (235 grams) Greek Yogurt/ Sour Cream
½ cup (4 oz) Vegetable Oil
1½ tsp Pure Vanilla Extract
2 cups (280 grams) All-Purpose Flour
2 tsp Baking Powder
¼ tsp Salt
350 grams Fresh Strawberries, hulled
2 tsp Confectioner’s Sugar/Icing Sugar
Method
Preheat the oven to 375F/190C.
Prepare a 9” cake pan by brushing it with a little oil and then dusting it with all-purpose flour. Place parchment paper at the bottom of the tray. Keep it aside for later.
Hull the strawberries and cut half of them into small chunks for putting inside the cake and halve the rest for decorating the top of the cake. Now keep them aside for later.
In a medium-sized bowl, crack the eggs and add the sugar, first with the mixer on medium speed mix the two. Then increase the speed of the mixer to medium-high speed and beat the mixture till it turns light and doubles in volume.
Add the Greek yogurt, oil, and vanilla extract and mix it all on a medium speed till well blended.
To the flour, add the baking powder and salt and whisk till well combined.
Add the flour mixture to the batter in two batches mixing on a medium speed till just incorporated.
Now using a spatula give the bowl a scrape all around to pick up any of the dry ingredients that may be stuck to the side and bottom of the bowl.
Once you have a smooth batter, pour half of the batter into the prepared cake pan. Using a spatula evenly spread it around the base of the cake pan before placing a layer of the diced strawberries on top of it. Now spoon the remaining batter to cover the strawberries and using a spatula, spread it out evenly over the strawberries. Decorate the cake by placing the halved strawberries on the top while pressing them down gently.
Please the cake in the preheated oven and bake for 45-50 minutes or until a toothpick inserted into the center comes out clean.
Allow the cake to cool for 15 minutes before running a knife or spatula around the edge to loosen the cake.
Remove the cake and place it on a wire rack to cool completely.
Once cooled, you can decorate the cake by dusting on some confectioner’s sugar/icing sugar.
