Easy Saffron Ice Cream

Try this super simple ice cream recipe with a special saffron and pistachio twist! Forget store-bought, this homemade ice cream is so much better. This easy recipe for ice cream is perfect for a sweet treat!



Ingredients


  • 2 cups heavy whipping cream (35%)

  • 1 can (14oz) sweetened condensed milk

  • 1 tsp saffron strands

  • 1 tbsp milk powder

  • 1 drop yellow food color (optional)

  • 1/3 cup pistachios, chopped


Method


Step 1: Infuse the saffron

  • In a small bowl, add 3 tablespoons of heavy cream and the saffron strands.

  • Microwave in 30-second intervals until just warm (about 30–60 seconds). Do not over heat. Set aside.


Step 2: Whip the cream

  • In a large mixing bowl (or stand mixer), whip the remaining heavy cream until soft peaks form.


Step 3: Combine with condensed milk

  • Gently pour in the sweetened condensed milk. Mix on high speed until well combined and smooth.


Step 4: Flavor the ice cream

  • Add the saffron-infused cream, milk powder, and yellow food color (optional).

  • Whip until everything is well combined and thick.


Step 5: Layer with pistachios

  • In a freezer-safe container, pour one-third of the ice cream mixture and sprinkle with one-third of the pistachios.

  • Add half of the remaining mixture, followed by another layer of pistachios.

  • Finish with the rest of the ice cream mixture and top with the remaining pistachios.


Step 6: Freeze

  • Cover tightly with a lid and freeze for 6–8 hours, or until fully set.


Serving Suggestion


Scoop into bowls or cones, and garnish with extra chopped pistachios for added crunch.
