Ingredients

Makes 12 servings

  • 2 Sheets Puff Pastry, thawed in the refrigerator

  • 2-3 Red Apples, preferably Red Delicious

  • 2 tbsp Lemon Juice

  • 3 tbsps All Purpose Flour, to sprinkle on the work surface

  • 2 tbsp Unsalted Butter, melted

  • 3 tbsp White Granulated Sugar

  • 1 tbsp Brown Sugar

  • 2 tsp Cinnamon Powder

  • ⅛ tsp Salt

  • 1 tbsp Confectioners’ Sugar for decorating (optional)

Method

  1. Thaw the puff pastry in the refrigerator for best results

  2. In a bowl, half filled with water, pour in the lemon juice and stir it

  3. Cut the apples in half, remove the core, then slice the apples into paper-thin slices. Leave the peel so it will give the red color to your roses. After cutting the apple, place the apple slices in the bowl so they don’t oxide and change colour.

  4. Now place the bowl in the microwave for about 3 minutes, to make the apples slightly softer and easy to roll.  Alternatively, you can put the apples in a pan with the water and simmer them on the stove. The apple slices should be cooked just enough to bend without breaking.

  5. Mix the white sugar, brown sugar, cinnamon, and salt in a bowl.  Whisk till well combined.  Keep the prepared cinnamon sugar aside for later

  6. Drain the apples and keep them aside as well

  7. Preheat the oven to 400º F (200º C)

  8. Dust your work surface with a little all-purpose flour and a generous helping of the sugar mixture.  Unwrap the puff pastry and lay it over the prepared surface. Dust some flour and sugar mixture on the top of the pastry.

  9. Using a rolling pin stretch the dough into a rectangular shape of about 12 x 9 inches (30 x 22 cm). Then cut the dough into 6 strips, each about 2 x 9 inches (5 x 22 cm).

  10. Now take the melted butter and lightly brush it along one strip of the dough

  11. Leaving a little pastry on the two ends start arranging the apple slices on the dough, skin side up, and overlapping them halfway.  Make sure to let them pop a little out of the strip. Sprinkle with cinnamon sugar.

  12. Now fold up the bottom part of the dough to secure them in place

  13. Lightly brush on more butter and then start rolling the dough to form the roses

  14. Starting from one end, carefully roll the dough till you reach the other end. Seal the edge at the other end by gently pressing with your finger.

  15. Now place them in a regular muffin tray and bake for 40-45 minutes, until fully cooked.
