Soaking Dry Fruits

With Christmas just about a month away, its time for us to soak the fruit for our super moist Fruit Cake recipe! These delicious dried fruits are soaked in alcohol and bring a ton of flavour to our Christmas Fruit Cake. Don’t forget to tune in for next week’s video to see it all come together!



Ingredients

  • 100 grams Black Currants

  • 100 grams Prunes

  • 100 grams Dried Apricots

  • 100 grams Figs

  • 200 grams Mixed Peels

  • 150 grams Dates

  • 300 grams Sultanas (Raisins)

  • 50 grams Candied Ginger

  • ¼ cup Orange Marmalade

  • 350-400 ml Cointreau, Rum, Brady, Whisky


Method


  • Cut all the dry fruits into small pieces and place them in a bowl.  Give them a stir to make sure the fruit gets well mixed.

  • Transfer the mixed fruits to a glass jar and pour your preferred alcohol into it.

  • Cover with an airtight lid and give the jar a shake to make sure the alcohol and the fruits get well mixed. Store at room temperature for about a week away from the sunlight in a dry place.

  • Give the bottle a shake every other day to make sure all the fruits get a chance to absorb the alcohol.

  • For best flavour and results, soak the fruit in alcohol for a minimum of a week before making the cake.
