The Ultimate Beef Cutlets

This quick and easy Beef Cutlet recipe is tender, delicious and loaded with flavour! These Beef Cutlets were my childhood favourite, and I am so excited to share this recipe with you. You can customize the shape and size of these cutlets to make anything from sliders as a starter to juicy burger patties!



Ingredients


  • 1 lb (450 grams) Ground Beef

  • 2 tsp + 1 tsp Oil

  • 1 tsp Salt

  • 1 tsp Black Pepper 

  • ½ tsp Cumin Seeds 

  • ½ inch Ginger, finely minced

  • 3 Garlic Cloves, finely minced 

  • 1 Green Chili, finely minced

  • 1 Onion, medium, finely chopped

  • 1 Tomato, medium, finely chopped

  • ½ -1 tsp Kashmiri Chili Powder 

  • ½ tsp Coriander Powder 

  • ½ tsp Garam Masala Powder 

  • ¼  tsp Turmeric Powder 

  • 1 tbsp Lemon Juice 

  • 2 Potatoes, small, boiled and smashed

  • 1½ -2 tbsp Cilantro Leaves, finely chopped

  • 1 Egg 

  • 1 cup Breadcrumbs 

  • Oil – for frying


Method


  1. Heat a stainless steel skillet on high heat.  When the skillet is hot and water is splashed on it forms small dancing balls on the skillet, pour in 1 tablespoon of oil, swirl the pan around to coat the base of the pan with the oil, and break up the ground beef and place it all over the base of the skillet.  You want to sear the ground beef (brown it) to add more flavour to the cutlets.

  2. Season the meat with salt and pepper and once the meat has browned on one side, flip it over and allow it to brown on the other side.  

  3. Now take it off the heat and put the browned beef in a bowl to cool, leaving any fat rendered from the ground beef in the pan.

  4. Lower the heat to medium and in the same pan, add 1 tsp of oil and toss in the cumin seeds. When you hear the cumin seeds crackle, add the minced ginger, garlic, and green chili.  Sauté till they lose their raw flavour.  Add the finely chopped onions and sauté until the onions turn translucent.  Now add in the finely chopped tomato and continue sautéing till it softens.  Add chili powder, coriander powder, garam masala, and turmeric powder.  Sauté till the spices lose their raw taste.  Now add the lemon juice, give the spice mix a quick stir before adding the mashed potato and mixing it well with the rest.

  5. Add this to the bowl with the ground beef and allow it to cool before sprinkling the finely chopped cilantro in and mixing it all.  Once it is all well combined, if you take a portion in your hand and squeeze it together, it should be able to hold itself together.

  6. To shape the cutlets, set up a workstation. In a shallow dish, lightly beat up the egg, and in another shallow dish put the breadcrumbs.  Keep a large plate or tray to place the formed cutlets.

  7. Take a small ball of the cutlet mix in one hand then press it down and flatten it on the palm of your other hand to form into a disk shape.  You can make them oval, heart, or cylindrical as well.

  8. Once you are satisfied with the shape, dip it lightly into the beaten egg, shake off excess, and place it in the bowl with the breadcrumbs.  Turn the cutlet on all sides making sure that the cutlet gets well coated with the breadcrumbs on all sides. Now place the coated cutlet on your workstation and using a butter knife start flattening it down, and with the side of your other hand keep turning it around till you are satisfied with the shape.  Place the formed cutlet on the plate/tray. Repeat the process till you have shaped all the cutlets. 

  9. Now, you can freeze the cutlets for a later day or fry them right away.  

  10. In a shallow fry pan, heat oil on medium-high heat. When the oil is hot, gently place 4-5 cutlets, one at a time, into the pan. Fry till golden brown on all sides. Remove onto a plate lined with a kitchen paper towel or place it on a wire rack to drain excess oil.  Fry the next batch. Repeat till all the cutlets are fried.

  11. Serve them hot along with some ketchup as a snack or along with the main meal. You can also make delicious burgers or sliders with these beef cutlets.
