Rocky Road Fudge

Since so many of you loved my 2-ingredient, 2-minute Chocolate Fudge, I decided to make another 2-minute fudge for you! Today we are going to be making our delicious Rocky Road Fudge!



Ingredients


  • 1 can (397g, 14oz) Sweetened Condensed Milk 

  • 2¼ cups (400g) Semi-Sweet Chocolate Chips

  • 2.5 tbsp (35g) Unsalted Butter

  • 1 tsp Pure Vanilla Extract

  • 3 – 4 cups (150g) Mini Marshmallows 

  • 1½ cups(230g) Almonds, salted


Method


  1. Line an 8”x 8” cake pan with parchment paper.

  2. In a bowl add the sweetened condensed milk, semi-sweet chocolate chips, and unsalted butter.  Give it a mix and place it in the microwave to melt for 1 minute at a time in 30-second increments.  Microwave it till the chocolate has just melted. This should take approximately 2 minutes. Give it a mix till you have a smooth mixture.

  3. Add the vanilla extract, mini marshmallows, and almonds, and mix till the marshmallows and almonds get coated with the fudgy mixture.  

  4. Toss the fudge in the prepared cake pan making sure that it is evenly distributed. Cover and refrigerate for 2 two hours to set. Remove the set fudge from the cake pan and cut into desired size pieces.
