Easy Healthy Egg Muffins

Ingredients
12 Large Eggs
¼-½ cup Red Bell Peppers, diced
¼-½ cup Green Bell Peppers, diced
¼-½ cup Green Onions, stalk, and onions chopped separately
¼-½ cup Corn Niblets
¼-½ cup Carrots, diced
¼-½ cup Turkey Bacon, diced
¼-½ cup Broccolini Heads
¼-½ cup Grape Tomatoes. sliced
¼-½ cup Cheese, grated
Salt to taste
Pepper to taste
Oil, for brushingÂ
Method
Preheat the oven to 375F/190C.
Crack and beat the eggs in a large measuring cup for easy pouring. Season the eggs with salt and pepper to taste.
Brush a little oil in each muffin cup and start distributing the mix-ins. Pour the beaten eggs into each cup till three-fourths full. Top with grated cheese and bake for approximately 20-25 minutes or until a toothpick inserted into the center comes out clean.Â
To remove the egg muffins run an offset spatula or a knife around the muffin to release it from the muffin cup. Now gently lift it and place it on a plate or in a box if you are making it as meal prep.Â
