Easy Baked Chicken and Veggies

This easy Baked Chicken and Veggies is a delicious and healthy meal everyone will enjoy! Loaded with carrots, potatoes, and onions, this dish makes a well-balanced meal.



Ingredients


  • 2.5 lbs Chicken, thighs, and drumsticks

  • 3 (400 grams) Carrots 

  • 24 (750 grams) Baby Potatoes 

  • 1(300 grams) Onion

  • 1 tbsp Garlic Powder

  • 1 tbsp Onion Powder

  • 1 tbsp Smoked Paprika

  • 1 tsp Cayenne Pepper

  • 1 tsp Oregano

  • 1 tsp Parsley

  • 1 tsp Lemon Pepper Seasoning

  • 2 Chicken Bullion Cubes, grated

  • 3 tbsp Oil


Method


  1. Wash and pat dry the chicken pieces.

  2. Wash, peel, and cut the carrots into bite-size pieces. Cut the baby potatoes into halves. Peel and cut the onion into large chunks.  Toss them all into a bowl.

  3. Add garlic powder, onion powder, smoked paprika, cayenne pepper, oregano, parsley, lemon pepper seasoning, and grated chicken bullion cubes into a bowl.  Give it a mix till all the seasoning gets well combined.

  4. Sprinkle three-fourths of the seasoning on the chicken pieces and rub it onto the chicken. 

  5. Add the remaining seasoning to the bowl with the veggies.  Toss them around till they get well coated with the seasoning.

  6. Take a 9”x13” baking tray, place the seasoned chicken pieces, and evenly add on the seasoned vegetables.  

  7. Cover the dish and leave it to marinate for an hour.

  8. Preheat the oven to 375F/190C.  Bake the marinated chicken and vegetables for 30-40 minutes or until the internal temperature of the chicken reaches 165F/75C.
